SUSTAINABILITY POLICY: B&M BRISKET
At B&M Brisket, sustainability is at the heart of how we operate. As a Burmese-British fusion street-food business, we are committed to serving great food while caring for our community and the environment. Our goal is to minimise our environmental footprint and continually improve the way we work.

- Responsible Sourcing --> We aim to source ingredients locally wherever possible to reduce food miles and support small suppliers around London and the South-East. We prioritise fresh produce, high-quality meats, and partners who share our values around sustainability and ethical production.
- Minimising Waste --> We operate with a low-waste mindset across all our stalls and events.
-
We actively reduce food waste through careful planning and batch cooking.
-
Any surplus ingredients are repurposed safely into next-day dishes where appropriate.
-
We avoid unnecessary packaging and aim to keep our operations clean and efficient.
- Eco-Friendly Packaging --> All our packaging is 100% recyclable, biodegradable or compostable. This includes:
-
Wooden or plant-based cutlery
-
Biodegradable containers
-
Recyclable paper bags
We continually review new sustainable packaging alternatives as they become available.
- Sustainable Energy Use --> Our stalls and trailer operate using a silent generator, reducing both noise and carbon emissions. Where event sites provide power, we always opt for the cleaner, greener option.
- Community & Social Responsibility --> We are proud to be part of the Croydon, Battersea and wider South London community. We support local markets, treat customers fairly, and maintain high food-safety standards. We believe good food should bring people together and contribute positively to the local area.
- Continuous Improvement --> Sustainability is an ongoing journey. We regularly review our sourcing, packaging, energy use and daily operations to ensure we meet modern environmental expectations and align with our long-term goals. As our business grows, we are committed to investing in more energy-efficient equipment, improved recycling processes and responsible expansion.
